White Chicken Enchiladas

1 1/2 lbs chicken, cooked and shredded
1 large can of green enchilada sauce
2 cans of cream of chicken soup
1 oz package cream cheese
8 oz mushrooms, sauteed
1 onion, sauteed
20 flour tortillas
shredded cheese
1 green pepper diced and sauteed (optional)

In a saucepan, pour enchilada sauce and cans of soup, heat through.  Meanwhile, place cream cheese in microwavable bowl and microwave on 30% heat for 3 minutes until softened.  Stir.  Add to the saucepan.  Whisk until the sauce is creamy.  Add mushrooms and onions (and peppers) to the saucepan.   Heat through.  Remove from heat.  Lay out tortilla and put about 1 oz of chicken on tortilla.  Add about 1/8 cup of sauce.  Add 1 Tbl cheese.  Roll tortilla up.  Repeat with all of the tortillas. 

To cook: Grease baking dish, place filled tortillas, seam side down, into dish.  Pour extra sauce over the top and sprinkle cheese over.  Bake for about 40 minutes until bubbly at 350.  Enjoy!

Quiche in a Bag Recipe

This is the directions.
However, I one a a half times the recipe, so you will need to use a larger pan and maybe cook it for a few minutes more.
  1. To serve, thaw completely. Shake bag well and pour into a spray-treated or greased deep dish pie plate or quiche pan.
  2. Bake at 350ยบ for 35-45 minutes, until lightly browned on top and well set in the center.

Eileen's June Meal

Honey Barbecued Ribs

2 lbs. Country style pork ribs
1/2 tsp. garlic salt
1/2 tsp. pepper
1 Cup. Ketchup
1/2 Cup. Brown Sugar
1/2 Cup. Honey
1/4 Cup. Spicy Brown Mustard
2 Tbs. Worcestershire Sauce
11/2 tsp. liquid smoke

Thaw ribs. Place country style pork ribs in the bottom of a large crock pot. Cover and cook on high for 3 hours. Drain, reduce heat to low. In a bowl combine remaining ingredients. Mix well. Pour over ribs in crock pot. Cover and cook on low for 2 hours.

Sweet and Sour Meat Non-balls

We had this for dinner last week. My husband thinks you are a genius. He said the flavor was throughout the meat better then a meatball.

Meatloaf

YUMMY!! Ben, my 8 year old, loves meatloaf. When it was his turn to cook dinner he picked Janet's meatloaf. It was yummy. We really liked the sauce on top.

Tater Tot Casserole

We have only had Tater Tot Casserole one other time and I have never made it before. This was so yummy all of the kiddos loved it and so did my hubby. Please post the recipe!!!


Spanish Chicken and Rice

We had this on Cinco De Mayo! I added plain uncooked rice to the Spanish Rice Mix and added a little extra water. I was afraid it might be a little too spicy for my little ones. We loved it and can not wait until we have it again. Thank you Eileen!!

Hearty Homemade Red Sauce with Sausage & pasta

This is a homemade sauce and is different eveytime I make it, so I will just post ingredients. I do not have exact mesurements.

Tomato sauce
Tomatoes canned, diced
Onions
Green Pepper
Garlic
Zucchini
Italian Seasonings
Italian Sausage

I will be giving dry pasta to go with it. Can heat this is microwave or on the range.
It is a family favorite!!

Sweet and Sour Meat Non-Balls

Sweet and Sour Meat Non-Balls
(Because, really, what’s the point of making it into balls?)

Serve over rice

1 lb ground beef
½ cup (about ½ package) saltine cracker crumbs
¼ cup milk
1 T. dry onion
1 tsp. salt
½ tsp. Worcestershire sauce
1 egg
1 cup packed brown sugar
2 T. cornstarch
1 (20 oz) can pineapple chunks
2/3 cup vinegar
2 T. Soy sauce

Brown the hamburger. Add crackers through egg. Cook in skillet until crackers are browned and egg is cooked. Put aside in a bowl. Mix brown sugar and cornstarch in skillet. Stir in pineapple and juice, vinegar, and soy sauce. Heat to boiling, stirring constantly. Reduce heat, add meat; cover and simmer for 10-15 minutes, stirring occasionally. Serve over rice.

Turkey Nacho Burgers


1 1/4 lbs turkey burger
1/4 cup chopped cilantro
1 Tbl chili powder
2 tsp cumin
1 Tbl grill seasoning
3-4 oz diced Monterey Jack Cheese

Mix ingredients together and form into 4 patties. Freeze if desired.
Cooking~
Can grill, broil, bake, or fry. Serve on a bun or on a salad with taco chips & salsa.

PIzza Pasta Casserole

Pizza Pasta Casserole Freezer Recipe

2 lbs sausage
1 jar spaghetti sauce
2 cans tomato sauce
1 pkg spiral pasta

3 cups shredded mozzarella and cheddar cheese
sliced pepperoni

Cook spiral pasta noodles according to package instructions. While pasta is cooking, in a large skillet over medium heat, brown sausage together sausage is no longer pink; drain fat. Stir in spaghetti sauce and pasta, once noodles are cooked and drained. Divide into 2 Ziplock bags. Cool if needed, then cover and freeze.

To cook: Thaw casserole in fridge overnight (or defrost in microwave). Spray a 9"x13" with non-stick cooking spray, and dump mixture into pan. Sprinkle with cheese and top with pepperoni. Bake at 350F for 35-40 minutes or until heated through.

Reheating Tamales and Mar Recipes

To reheat the tamales, wrap them in wet paper towels and microwave-- they need to stay moist.

For the tamales I basically followed the instructions here: http://www.sonofthesouth.net/tamales/Tamales_Recipe_.htm but cut down the seasonings. I don't have a tamale steamer, but I did them in small batches in my vegetable steamer-- they have to steam for about 2-3 hours per batch. Winco sells the MaSeCa and corn husks and most of the seasonings you need in bulk. I used sirloin pork roast that I cooked overnight in the crockpot and shredded for the meat. The meat absorbed all the liquid, so I used chicken broth for the broth in the recipe.

For the apricot barbq pork, I cooked the pork roasts the same as above, overnight on low in the crockpot, shred it to absorb the juices. Then in the blender I mix one bottle of apricots (quart size, just the fruit, not the juice) and some barbq sauce until the color is right-- sorry I don't have measurements. It's one of Stephen's favorites so I hope you like it-- it was a copycat from a resturant in Logan. The sauce originally started out as one we use over pork chops, but with kids, this way is easier and less messy.

Green Chile Enchilada Casserole

Melania

-two cans cream of chicken soup
-1/4 cup milk
-one small can diced green chiles (Hatch is the best)
-one- two chicken breasts
-1/2 onion (optional)
-1 tsp. onion salt
-shredded cheese
-two- three white corn tortillas

Mix soup, about 1/2 of the soup can of milk, can of green chiles (undrained), diced or shredded chicken breast, onion salt, and chopped onion in a large mixing bowl and mix well. Spoon a layer of mixture into bottom of pan. Then cover with a layer of cheese. Next tear tortillas into 1-2 inch pieces and layer on top of the cheese filling most cracks like a puzzle. then repeat until soup mixture is gone. Top with another layer of cheese. Bake cover with foil for about 30 minutes then uncover and bake until cheese is all melted and a little browned. Goes great with beans, Spanish rice or both!

Mexican Lasagna

* 1 pound extra-lean ground beef
* 1 (16 ounce) can refried beans
* 2 teaspoons dried oregano
* 1 teaspoon ground cumin
* 3/4 teaspoon garlic powder
* 12 dry lasagna noodles
* 1 cup diced tomatoes
* 1 1/2 cups tomato sauce
* 3/4 cup chopped green onions
* 1 (2 ounce) can sliced black olives
* 1 cup shredded cheese

1. In a large skillet, cook the ground beef over medium-high heat until evenly brown. Drain off excess fat. In a large bowl, combine the cooked beef, oregano, cumim, garlic powder, tomato sauce and tomatoes.
2. Place four of the uncooked lasagna noodles in the bottom of a 9x13 inch baking dish. Spread half of the refried beans over the noodles. Spread half of the beef mixture. Sprinkle with half the green onions and cheese. Top with 4 more uncooked noodles and repeat. Cover with remaining noodles and cheese.
3. Cover tightly with foil. Bake at 350 degrees F (175 degrees C) for 1 1/2 hours, or until noodles are tender (or boil the noodles before assembling and then bake for 45 minutes.)

We had Tara's Enchiladas last night for dinner. They were good. One word of warning take the foil off before cooking. Ours stuck to the enchiladas and peeled some of the tortilla off.

We had this for dinner last night. I loved the homemade noodles, they were so yummy!! It was a bit salty, not sure why~ I just do not use a lot of salt, it was just me though, my family did not say anything. There was plenty. Thank you Tara!!

Enchiladas

1/2 lb. ground turkey
1 1/2 C. cooked rice
1 16oz can re-fried beans (I use Rosarita vegetarian)
1 16oz can enchilada sauce
1 C. shredded cheese (I use pre-shredded fiesta blend)
1/2 onion finely chopped
1/2 t. garlic salt
1 package taco seasoning
8 flour tortillas

Brown ground turkey in pan with onion and garlic salt. Once meat is browned add taco seasoning according to package directions. On each tortilla put 1 1/2 T. of re-fried beans (straight from can) 1 1/2 T. meat mixture and 1 1/2 T. cheese and roll tortilla. Place enchiladas in a greased casserole dish (I use Pam spray) and pour enchilada sauce over the entire pan. Cook in oven at 350 for 30-45 minutes until sauce is bubbly.

All measurements are estimated as I rarely measure when I cook, and I had to half the recipe that I make since my enchiladas always make two nights plus leftovers for my family.

Tangy Meatballs

Meatballs:
1 1/2 lbs ground beef
3/4 cup rolled oats
2 eggs, beaten
1/2 c. finely chopped onion
1/2 cup milk
3/4 tsp salt
1/4 tsp pepper
1 tsp Worcestershire sauce

Sauce:
1 cup brown sugar
1/2 cup vinegar
2 tsp mustard
1/2 cup BBQ sauce
2 tsp Worcestershire sauce

Mix ingredients for the meatballs. Form meatballs (about golf ball size) and place in 9 x 13 pan. Mix sauce and pour over meatballs. Bake for 1 hour at 350. We like to serve it over rice.

For the freezer meal I will precook the meatballs.
You will need to heat the sauce and meatballs through until bubbly.

Pulled Pork Sandwiches

We had the pulled pork sandwiches and they were wonderful. All of the kids ate it really well, even my picky ones liked it. We used the entire bag of buns with one bag of the pork, but that is only because white bread is a huge treat to my kids. (They can eat an entire bag of Costco white rolls in an afternoon if I let them.) There was enough pork for all the sandwiches.

Stephen got this one ready while I was gone, so the only side dish was 2 cans of green beans, and it still fed my family. Thank you Krista!!!!!

Pie Crust for Turkey pot pie

Pie Crust

This recipe makes two double crust pies or four single crust pies.

3 C. Flour
2 C. Butter flavor shortening
In a big bowl cut shortening into flour.

2 t. Salt
1 C. Water
1 C. Flour
In a small bowl mix these together.

Combine all ingredients into big bowl and mix through (will be really gooey and wet). Cover with plastic wrap and let sit in refrigerator for 1 hour. Turn 1/4 of the dough out onto well floured surface and work flour into dough until rollable. With a well floured rolling pin roll to 1/8" thick and put into bottom of pie pan, prick thoroughly with a fork. Repeat process for top crust.

Turkey Pot Pie

We had this for dinner last night. It was really yummy! We had a lot of leftovers. It tasted homemade. The crust was flaky and rich. It was a bit watery when we first took it out, but letting it sit for 10 minutes thickened up.

Turkey Noodle Soup

Turkey Noodle Soup

4 T. chicken soup base
4 carrots, sliced
2 celery, diced
1 onion, chopped
5 C. water
3 C. turkey, precooked & cubed
2 C. favorite noodles, uncooked
2 t. olive oil
2 cloves garlic
1 bay leaf

Add olive oil to heated pot with carrots, garlic, onion and celery. Cook on med-high until just tender. Add water, soup base and bay leaf, stir until well blended and bring to a boil. Add turkey and noodles and boil until noodles are cooked through.

This is not an actual recipe as I tend to dash and dump when I make soup. I think that I was able to write down everything that I put in, however if I missed something I do apologize.

Turkey Pot Pie

Turkey Pot Pie
2 T. butter
1 onion, chopped
2 stalks celery
3 carrots, chopped
4T. Flour
4 C. chicken or turkey stock
2 potatoes, peeled & diced
2 C. cubed turkey ( I put in 4 cups)
2 T. chopped flat leaf parsley
1/2 C. frozen peas (I didn't use)
1 prepared pie crust
I egg lightly beaten (for egg wash, I didn't do)

Preheat oven to 350 F. Melt butter in saucepan & cook onion until tender. Stir in celery & carrots & cook for 2 minutes. Stir in flour & cook for 2 minutes. Add stock & bring to a simmer. Add potatoes & simmer until tender. Stir in turkey, parsley & peas. Pour mixture into bottom crust &top with top pie crust. Bake for 30 minutes until crust is golden and flakey.

I used a butter based crust so that it would be extra rich, this crust does not normally need an egg wash.

Sweet and Sour Chicken

I use one boneless skinless chicken breast per serving. Cook and shred chicken.

Sweet and Sour Sauce
Combine:
2 tsp soy sauce
1/2 cup honey
1/2 cup vinegar
1/4 cup ketchup
1 can pineapple

Bring to a boil and add thickening
(2 TBSP cornstarch mixed with 2 TBSP cold water)
Let boil about one minute or until sauce is clear and thick. Serve with Rice.

You can mix the chicken in with the sauce or put the chicken over the rice and the sauce over the chicken. This sauce also works well with meatballs or pork.


I included 3 cups of rice. I cook it in the microwave. 3 cups rice, 6 cups water, cover bowl with waxed paper, cook on hi 20 minutes. For the sauce and chicken, just reheat and serve-- I kept them separate, so if you have kids who don't want them mixed, they can have it not touching. :)

Kelly’s Meatloaf

3 lb ground beef
8 oz tomato sauce
1 cup quick oats
1 carrot, grated
1 cup potato flakes
2 tbls seasoning salt
1/4 cup dried onions
2 eggs

Thoroughly mix all ingredients. Place into one large pan or two loaf pans and bake at 350 degrees for 1 hour.

Pulled Pork Sandwiches

1 4-5 lb pork roast
1 cup brown sugar
1 cup salsa
4-6 buns

Place pork roast in crockpot or roasting pan. Add brown sugar and salsa. Cook in crockpot for 10 hours or in oven at 250 for 10 hours. At the 8th hour shred pork then cook for 2 more hours.

Warm buns in oven or microwave. Lay pulled pork on buns and serve!

I like to serve this with pineapple slices, jojos, and coleslaw.
