Enchiladas

1/2 lb. ground turkey
1 1/2 C. cooked rice
1 16oz can re-fried beans (I use Rosarita vegetarian)
1 16oz can enchilada sauce
1 C. shredded cheese (I use pre-shredded fiesta blend)
1/2 onion finely chopped
1/2 t. garlic salt
1 package taco seasoning
8 flour tortillas

Brown ground turkey in pan with onion and garlic salt. Once meat is browned add taco seasoning according to package directions. On each tortilla put 1 1/2 T. of re-fried beans (straight from can) 1 1/2 T. meat mixture and 1 1/2 T. cheese and roll tortilla. Place enchiladas in a greased casserole dish (I use Pam spray) and pour enchilada sauce over the entire pan. Cook in oven at 350 for 30-45 minutes until sauce is bubbly.

All measurements are estimated as I rarely measure when I cook, and I had to half the recipe that I make since my enchiladas always make two nights plus leftovers for my family.
