Sweet and Sour Chicken

I use one boneless skinless chicken breast per serving. Cook and shred chicken.

Sweet and Sour Sauce
Combine:
2 tsp soy sauce
1/2 cup honey
1/2 cup vinegar
1/4 cup ketchup
1 can pineapple

Bring to a boil and add thickening
(2 TBSP cornstarch mixed with 2 TBSP cold water)
Let boil about one minute or until sauce is clear and thick. Serve with Rice.

You can mix the chicken in with the sauce or put the chicken over the rice and the sauce over the chicken. This sauce also works well with meatballs or pork.


I included 3 cups of rice. I cook it in the microwave. 3 cups rice, 6 cups water, cover bowl with waxed paper, cook on hi 20 minutes. For the sauce and chicken, just reheat and serve-- I kept them separate, so if you have kids who don't want them mixed, they can have it not touching. :)
