Turkey Pot Pie

Turkey Pot Pie
2 T. butter
1 onion, chopped
2 stalks celery
3 carrots, chopped
4T. Flour
4 C. chicken or turkey stock
2 potatoes, peeled & diced
2 C. cubed turkey ( I put in 4 cups)
2 T. chopped flat leaf parsley
1/2 C. frozen peas (I didn't use)
1 prepared pie crust
I egg lightly beaten (for egg wash, I didn't do)

Preheat oven to 350 F. Melt butter in saucepan & cook onion until tender. Stir in celery & carrots & cook for 2 minutes. Stir in flour & cook for 2 minutes. Add stock & bring to a simmer. Add potatoes & simmer until tender. Stir in turkey, parsley & peas. Pour mixture into bottom crust &top with top pie crust. Bake for 30 minutes until crust is golden and flakey.

I used a butter based crust so that it would be extra rich, this crust does not normally need an egg wash.
