Sweet and Sour Chicken

I use one boneless skinless chicken breast per serving. Boil and then cut up and cook in melted butter until slightly browned.

Sweet and Sour Sauce
Combine:
2 tsp soy sauce
1/2 cup honey
1/2 cup vinegar
1/4 cup ketchup
1 can crushed pineapple (or tibits)

Bring to a boil and add thickening
(2 TBSP cornstarch mixed with 2 TBSP cold water)
Let boil about one minute or until sauce is clear and thick. Serve with Rice.

You can mix the chicken in with the sauce or put the chicken over the rice and the sauce over the chicken. This sauce also works well with meatballs or pork.
