Delicious

We had the Sweet pork & Tomatillo Dressing and thought it was really good. Thank you. It was great to have a convenience food with a fresh, homemade taste!

Aztec Quiche

1 pie crust
1 3/4 cups cheddar & Monterey Cheese blend
1/4 cup cheddar & Monterey cheese blend
3 eggs
4oz can of chopped green chilies
1/4 tsp salt
1/2 tsp cumin

Place pie crust in a 9 inch deep pie plate. Spread 1 3/4 cups of the cheese blend on the crust. Sprinkle green chilies over the cheese. In a small bowl, mix eggs, salt and cumin. Pour over the cheese. Bake uncovered 45-50 minutes.
We like to serve this will rolls and fruit salad. It is also great with salsa. Yummy cold too.

Sweet pork & Tomatillo Dressing

I apologize to everyone that did not get filled up with the burritos. I prepared both meals for my family of 5 and we had left overs of everything except the cheese because my kids wanted their meat cooked in quesadillas. So I did grate more cheese for them. We don't eat a lot of meat, so I felt that the pork & the beans was a substantial amount of protein. I'm sorry for those who felt it was insufficient. As Krista said, these were not supposed to represent the entire meal. I also did not know how much 1o pounds of meat would feed. I thought it would certainly be enough. Maybe I should have done some research. I apologize again.

Sweet Pork
3 lbs. pork roast
1 c worcestershire sauce
1 tsp dried oregano
1 tsp ginger
1 tsp salt
1 tsp garlic powder ( I use fresh minced garlic)
2 T dried minced onion ( I use fresh chopped onion)
1 tsp chili powder ( I didn't use this)

Cook on low in a crock pot for 8 hours.
the last hour, drain juices, shred pork and reheat with:

1 c brown sugar
1 -2 c enchilada sauce

Tomatillo Dressing
1 recipe ranch dressing pkt prepared (you'll need mayo & milk)
2 tomatillos, peeled
1/4 -1/2 bunch cilantro
1 clove garlic
juice of 1 lime
1/2 -1 jalapeno, seeded
1/2 anaheim pepper, seeded

Process or chop everything finely. Blend til well mixed. Add cilantro to taste.

Pork Burritos

We just had the Pork Burritos tonight. I loved the sauce!!! There was not enough meat for 8 tortillas so I made rice and added to the burritos with tomatoes and lettuce. It was yummy!

Pork Burritos & Quiche

We had the pork burritos last night and the quiche tonight.

Both were AWESOME. I loved the flavors, and everyone scarfed them down. Both were a bit on the "light side." I had to use both meals of the burritos to feed our family of 5. And, the quiche was a great treat but not a hearty main dish. We just added other things to these meals and made them complete.

I don't think I would have wanted two pieces of quiche necessarily, one was perfect, but maybe if it had sausage or something in it, it would have felt more hearty. I am not disappointed though. We loved it.

And I definitely want recipes!

Chicken Pot Pie Recipe

1 can of chicken
2 cups frozen veggies
1 can cream of chicken soup
2 pie crusts

Mix together. Place one crust in bottom of pie plate, add filling, arrange the top crust on top.

Janet's Sweet and Sour Chicken

This was yummy! I shredded the chicken and added it to the sauce and heated it. It was yummy and there is enough left over for Brian to have for a lunch next week. Thank you Janet!!
